iDen & Quanjude Beijing Duck House, Vancouver – Canada

Project description

Quanjude was established in 1864 during the Qing Dynasty under the reign of the Tongzhi Emperor. Quanjude’s heritage of Peking roast duck preparation – using open ovens and non-smoky hardwood fuel such as Chinese date, peach, or pear to add a subtle fruity flavour with a golden crisp to the skin – was originally reserved for the imperial families. In June 2008, the technique of Quanjude hanging oven roast duck was named as state-level intangible cultural heritage.Arriving from Beijing in 2019, Quanjude set to open a Flagship Fine dining restaurant iDen & Quan Ju De in Vancouver, and receive its First Michelin star in 2022, when the Michelin guide First time landed to Vancouver, Canada.
