A design embodying the values of the Chef: respect for producers, for the environment and for people
At Démodé, we see our work with Chefs as a collaboration. We are committed to expressing the Chefs’ values and story by creating a unique environment perfectly tailored to them.
For Claire Heitzler, we have focused our creativity on nature and sustainability. The design is purposely refined to put the products to the fore and to celebrate nature: shades of green mixed with earthy tones, organic shapes, use of natural materials, and a paper cloud as a signature element above the counter.
The entrance as a tribute to Claire’s brand identity
At the entrance we used a mosaic carpet, featuring a tree of life which could also represent roots, part of Claire’s logo which underlines the beauty of the craftsmanship while being a modern reinterpretation of mosaics. For this emblematic feature, we chose to work with Fragments d’Art, a local artist from Le Vésinet – a beautiful Parisian suburb.
The simplicity of the counter: a strong and unusual way of presenting the products
The rounded countertop is the centerpiece of the space. With its warm colors, sublimated by blue zellige tiles, this tailormade element is a subtle alliance between earth and sky. Its function is quite unusual as it doesn’t host a display. Indeed, main of the customers pre-order their pastries through the commercial website and come to collect them. Nonetheless to address all customer needs, Claire has chosen to create a daily pastry plate to be presented to the customers with all the pastries of the day available without preordering. This strong parti-pris comes from Claire’s willingness to reduce wastage and to use only seasonal ingredients.
Transparency and organic shapes as the final touch
To emphasize on nature, we created organic-shaped niches celebrating both craftmanship and local producers, and we designed a green canopy using rounded shapes while unveiling the warm and vegetal atmosphere of the office that is behind. As decorative elements we used products for sale to ease the readability of the offer and to propose a refined ambiance.
About Claire:
Claire Heitzler is a leading figure in the French pastry world. After training with some of the world’s greatest Chefs – including Restaurant Troisgros, Ladurée and Alain Ducasse’s Beige restaurant in Japan – Claire decided to set up her own pastry workshop in a Click & Collect model, which values are focused on seasonality, sustainability, and respect – for the environment but also for producers, and for all people implied in the project.
The concept: seasonal pastries to order online and to pick up at her Click & Collect in Levallois – or to have delivered in the Paris region.
